So I found this recipe in an assisted living home’s old cookbook. I found the recipe to be fairly simple. After trying it several times, I decided to tweak it a bit and create Simply Strawberry Banana Bread. It’s a nice way to sneak in more fruit, and it tastes great.
I like recipes that I can whip together rather quickly. This recipe is my favorite for banana bread because prep time is about 10 minutes, throw it in the oven, and an hour later you’ll be enjoying fresh banana bread! No long complicated steps with this recipe!
First you begin by mashing your three bananas. I found it was easiest to do this with a fork. Also, overly ripe bananas are perfect for this recipe. No more wasted bananas in my house!
Once you have your bananas mashed, then you need to cream your butter. Next you add your beaten eggs, followed by the sugar, flour, vanilla, baking soda, and salt. Mix that all together.
Now add your mashed bananas!
Add a half a cup of strawberries to your mixture. I know the bread’s called strawberry banana, but if you don’t like strawberries you could always substitute 1/3 cup of your favorite nuts. Or you can leave out the strawberries with no substitution. I used frozen strawberries for mine.
Place bread in a greased bread pan. Oven needs to be at 350. The bread will cook for about an hour, you want it to be browned on top and the center cooked through.
The bread smelled so great, that I couldn’t resist the temptation to cut into it immediately! Serve with butter and you have delicious and healthy breakfast!
Simply Strawberry Banana Bread Recipe
1/2 c. butter
1 c. Sugar
2 c. flour
1/2 tsp. vanilla
3/4 tsp baking soda
1/4 tsp. salt
3 very ripe bananas
1/2 c. frozen strawberries
Preheat oven to 350. Mash bananas and set aside. Beat egg, and set aside. Cream butter in a mixing bowl. Add eggs, sugar, flour, vanilla, baking soda, and salt to butter. Mix. Add mashed bananas, followed by strawberries and mix. Place mixture in a greased bread pan. Bake for about an hour or until center is cooked through.
